Apple Breakfast Cake

Personally I have no issue with nuts, after all, I am a little nuts,
so I add a cup of walnuts to the batter.

5 medium apples cubed
1/3 cup of sugar
2 tsp of cinnamon

Peel & dice apples, combine with sugar & cinnamon & set aside.

2 cups of sugar
4 egg replacer
2 1/2 tsp of vanilla
1 cup of vegetable oil
1/2 cup of orange juice
3 cups of flour
1 tbsp of baking powdr
1/4 tsp of salt

In a large mixing bowl beat together the sugar, egg replacer, vanilla, oil and orange juice.  In a separate bowl stir together the flour, baking powder and salt.  Add wet ingredients to dry and stir until smooth.

Spoon half the batter into a greased and floured 10 inch bundt pan.  Sprinkle apple mixture evenly over batter and then add remaining cake mixture.  I like to play with it at this point and do 2 layers of cake and's tricky though as this is some thick and sticky dough! 
Just play with it and you'll find your way!

Bake at 350ยบ F for 65-75 know your oven.  

Let cool for an hour on wire rack....I dare ya!
