1 package of firm tofu
green beans (I use ratio half:cauliflower)
2 cloves garlic
half inch of ginger
1 tsp mustard seeds
1 tsp cumin seeds
2 tbsp curry of choice
salt to your taste
Adjust all to your taste after you try it.
Wash & cut cauliflower into small florets, cut green beans into half inch pieces, & cube tofu into quarter inch pieces. Set veggies aside for now.
Heat a large skillet/wok with olive oil & fry the mustard & cumin seeds, & the curry for a few minutes, then saute ginger & garlic for few minutes more.. Add the tofu, cauliflower & green beans to the pan & cook until the veggies are your desired mushiness!!
I add a little water as I go, not too much...just to keep things juicy.
This is a very tasty dish, imo, & if you are watching your weight, you can eat it all & not feel guilty!
