Mmmmuffins!

Banana Bran Muffins with Walnuts
5 or 6 over ripened bananas
4 egg replacers or eggs for you ovo folks "eggs"
1 1/2 cup of brown sugar
1 cup vegetable oil
1/2 cup soy milk
2 1/2 cups whole wheat flour
1 1/2 cup of natural bran
1 tbsp baking powder
1 tsp baking soda
1 tsp salt

In a mixing bowl, combine bananas & "eggs" & mash/mix well.  
Add the sugar, oil & milk & blend well.

In a large, seperate, bowl, mix together the remaining dry ingredients, 
then add the moist ingredients.  
Mix this only until the entire mixture is moist.  
Spoon the batter into muffin tins that have been greased with 
your favourite form of, well, "grease"

Bake at 375º for 25-35 minutes.  
I like to time at 20 minutes & then watch how they look.

Again, having no aversion at all to nuts....
I add 1 cup or more of walnuts.
Awesome cut in half with some peanut butter on them!!
