How Sweet It Is...

This is a strange little salad but so tasty.  I found
this recipe in the Planet Organic Cookbook.

Sweet Potato Salad
8 cups of sweet potatoes in bite sized pieces
1 cup of vegan mayo
1/2 cup of golden raisins
1/2 cup of unsalted chopped pecans
3/4 tsp of minced fresh ginger
1/2 cup of diced celery
1/2 cup of diced red onion
1/2 tsp of sea salt
1/2 tsp of ground pepper
2 tsp of fresh lemon juice

Steam potatoes until fork tender, then cool.
I like to give them a cold bath to 
prevent further cooking.
In a large bowl, mix all the very odd ingredients 
& toss gently with cooled, cooked potatoes. 
Gently so that your potatoes do not fall apart.
Chill in your refrigerator before serving.
I prefer this in the fridge over night.
