Short & Sweet Quinoa Corn Chowder

I'm a huge fan of Quinoa; a great ancient grain Quinoa has all the amino acids that make up a complete protein...makes it perfect for this little vegan gal.  
This chowder is super easy & if you feel like a little, make a little, if you feel like a lot....
2 cups of water
1/4 cup of quinoa
1/2 cup of white potato, cubed
2 tbsp of carrot, diced
1/4 cup of onion, chopped
1 1/2 cups of corn, fresh or frozen
2 cups or soy or rice milk
salt as you like it
black pepper
parsley for garnish if you like

In a medium sized pot simmer quinoa, potato, carrot &
onion until tender.  Add the yummy corn.
Bring to a boil & then simmer for 15 minutes.
Add soymilk & bring just to a boil.
Season so it's just how you love it..garnish with parsley.

This is a nice summer chowder no matter what the humidex!
