For the Love of Soup!

Oh how I love this season of cool damp air on my face, out walking in the woods with colourful leaves & the smell of moist earth preparing for its cold winters sleep.  As long as you are wrapped up & all cozy warm of course!

There is nothing better than coming inside to a warm bowl of homemade soup that is tasty & healthy!

6 - 8 carrots - sliced
2 onions - chopped
2 cloves garlic - chopped
2 celery stalks - chopped
1 vegan soup cube
1 package of ground almonds from the baking aisle

In a large pot, add all veggies, 6 cups of boiling water & the soup cube; cook for 30 minutes.
When veggies are tender, pulse with a stick blender or use food processor to blend.  Once blended, add the almonds, stir & serve!

I love this with a toffuti cheese sandwich!

Packed with vitamin C & calcium & none of those nasty store bought additives, sulphites & well, unknowns!!
