Try Something New!

While everyone is scrambling to find those super duper 
Christmas food recipes, I am thinking more about after!  
You know, the Slim Down Days!!

In my quest to eat as healthy as possible I am making lots of new dishes!  The first dish is an excellent cold salad found in the Forks Over Knives companion cookbook; Quinoa, Black Bean Corn Salad.

Second & third photos are dishes in the tradition of my favourite Lebanese restaurant.  I am in search of how to make the same lentil soup from Tarboosh!  This one is not that one, but tasty nonetheless on this rainy December day!

The 2nd salad is just throwing together the following ingredients - Chick Peas, Kidney Beans, Fava Beans, Green Pepper, Cucumber, Tomatoes, Parsley & Lemon Juice.  A nice cold salad full of goodness.

For the Lentil Soup, I did the following.

In a large pot, place 1 cups of red lentils, 3 shredded carrots, & 1finely diced onion (larger pieces = longer cooking).
Cover with 4 cups of water & bring to a boil, reduce heat & let cook until all veg is super soft...you can let simmer for a while until they are nearly falling apart on their own.

In a small frying pan, add 1 tbsp of olive oil & when oil is hot, toast 1 tsp of cumin seed.  Add to the soup & then use a stick blender to puree the soup.  Salt along the way or at the end to your own personal taste!
